One of our most booked event dishes - simple, delicious and can be served hot or cold as a Bombay Potato Salad! It’s vegan too…
Ingredients:
• 4 x Potatoes, peeled and cubed into 4cm squares
• 1 x tin of chopped tomatoes
• 1 x tablespoon of vegetable oil
• 1 x onion, chopped
• 1 x tea spoon of cumin
• 1 x tea spoon of ground coriander
• 1 x tea spoon of turmeric
• Fresh coriander, roughly chopped
Method:
1. Heat oil in a non-stick pan and add the onions, cumin, turmeric and coriander. Cook until the onions begin to caramelise. Add tin of tomatoes.
2. Meanwhile, bring a medium pan of water to the boil, add the diced potatoes and cook until soft.
3. Once cooked, add potatoes to the onion mix and stir well. Add a splash of water. Add the mixed veg and cook until piping hot.
4. Serve onto 4 plates and top with coriander.
Option to serve with basmati rice or naan. Enjoy!
